a couple zucchini bread recipes

Zucchini Bread
Preheat oven to 350 F
Combine dry ingredients:
3 cups flour
2 tsp cinnamon
½ tsp nutmeg
1 tsp baking soda
½ tsp baking powder
½ tsp salt
Combine separately in a large bowl:
2 cups sugar
2 cups shredded zucchini
½ cup vegetable oil
2 eggs, lightly beaten
1 tsp vanilla
2 tsp molasses
One pinch or two of lemon zest
1 cup of chopped nuts (optional)
Mix dry ingredients into the second bowl of wet ingredients and stir until combined, fold in the nuts. The recipe makes two 8x4 loaves, grease the loaf pans and pour in the batter.Bake in 350F oven for 50-60 minutes, until a knife inserted near the center, comes out clean. Let the loaves cool in the pans for 10 minutes and then remove loaves to a cooling rack. Enjoy! Stephanie Gipperich

Mix these ingredients together by hand :
2 Cups Sugar
2 eggs
¼ tsp baking powder
1 Cup vegetable Oil
1 tsp salt
1 tsp baking soda
1 tsp vanilla
¼ c cocoa
add and mix well by hand (to avoid a mushy texture):
3 ½ c firmly packed shredded zucchini
2 ¾ c flour1/2 c dried sweet cherries
1 c pecans 1 c chocolate chips
1 c shredded coconut
Pour into 3 small (8 x 3 7/8 x 2 3/8) floured and greased loaf pans.
Bake at 325 degrees for 1 hour.
